- Troceamos en pollo y lo ponemos en un bol. Añadimos los ingredientes para el adobo, soja, vino y huevo, removemos todo y ponemos la maicena, volvemos a remover y reservamos el bol en la nevera.
- En una sartén ponemos el vaso de agua, la soja, el tomate, el vinagre, el azúcar y la sal. Removemos y dejamos que hierva unos minutos hasta que veamos que reduce y toma cuerpo. Retiramos a un cuenco y reservamos.
- Sacamos el pollo de la nevera y en un cazo no muy grande ponemos abundante aceite de oliva al fuego. Cuando esté caliente añadimos todo el pollo en adobo reservado, doramos por ambos lados, sacamos sobre un plato con papel de cocina y reservamos.
- Picamos pequeño el ajo (y pelamos y picamos el jengibre si usamos fresco). Troceamos en trozos grandes la cebolla y los pimientos. Aparte, descartamos el jugo de la piña y picamos en trocitos las rodajas.
- En sartén amplia ponemos 3 o 4 cs del aceite de freír el pollo, añadimos el ajo y el jengibre. Cuando empiece a dorar el ajo incorporamos la cebolla y los pimientos, removemos y dejamos que se hagan unos minutos sin que lleguen a pocharse mucho.
- Ponemos la salsa reservada, removemos, añadimos el pollo reservado y los trocitos de piña, damos unas vueltas y si vemos que la salsa queda líquida ponemos la maicena disuelta en agua para que quede con más cuerpo (yo no le puse). Servimos caliente.
