Calentamos un par de cucharadas de aceite en una sartén a fuego medio-alto y añadimos la pasta. Vamos removiendo durante unos 5 minutos y añadimos los tomates cortados.

- Dejamos cocinar la salsa otros 5 minutos mientras se hacen los tomates. Con una batidora pasamos la salsa y lo dejamos al fuego medio unos 10 minutos. Cortamos las pechugas de pollo en dados de unos 2 centímetros y en una sartén con dos cucharadas de aceite los doramos bien a fuego alto; sólo sellarlos, no cocinarlos.

- Añadimos la leche de coco y el pollo a la pasta que hemos hecho previamente. Subimos el fuego a nivel alto y removemos bien para que se mezcle todo. Bajamos a fuego medio-bajo tapado durante unos 20 minutos mientras el pollo se termina de cocinar.
- Servir encima del arroz basmati.
