- Rallamos los tomates o los batimos o los cortamos en trozos pequeños, yo he optado por rayarlos


- Picamos los dos ajos y, en una sartén con aceite de oliva virgen extra, los doramos un poco.


- Picamos la cebolla en trozos pequeños y la añadimos a la sartén junto a los ajos, la pochamos durante unos minutos.



- Una vez dorada la cebolla junto a los ajos, añadimos el tomate que hemos rallado anteriormente y dejamos que se sofría durante 40 o 45 minutos.



- Mientras se va haciendo el tomate frito, cocemos la pechuga en abundante agua donde hemos añadido el laurel, el pimiento verde, el pimiento rojo, los granos de pimienta, y el ajo.



- Una vez cocida la pechuga, la desmenuzamos con los dedos o mediante un tenedor y reservamos.


- Cortamos el queso tierno, tipo el cigarral o cualquier otro que funda, en cuadraditos pequeños y reservamos también


- Mezclamos en un bol tomate frito, la mitad de la pechuga cocida, y un poco de salsa picante, en este caso utilizado Piri Piri. Añadir al gusto

- Pasamos por una sartén las tortitas de trigo para que se tueste un poco y vamos montando en una cazuela de barro las enchiladas.

- Para montar las enchiladas primero ponemos una tortita de trigo, echamos la mezcla del tomate y la pechuga y un poco de queso, añadimos una nueva tortita un poco más de carne y tomate y cubrimos la fuente de barro con queso



- Segunda capa en la cazuela de barro -



- Cuando hayamos preparado las dos cazuelas las metemos en el horno que, previamente hemos precalentado a 190°, durante unos minutos hasta que el queso esté derretido. Podemos poner el gratinador los minutos finales para que gratine un poco el queso.
